Seafood or Beef Fajitas with Apple Salad

Apple Salad
Dice apples, salary, pecans, walnuts and mix with mayonnaise
Sprinkle with shredded coconut and cinnamon
Serve on bed of lettuce

Coat skillet in olive oil – use extra light virgin

Beef Fajitas
Sautee Beef Strips in Diced Garlic, Pepper and Coconut Rum
Stir in strips of green, red and yellow pepper, Vidalia onions, yellow squash, and mushroom medley;  Stir fry till done
 Top Beef with grated jack and Cheddar cheeses
Serve Beef with Mexican Rice side

Seafood Fajitas
Strips of salmon steak, scallops, baby shrimp and imitation lobster
Sautee in garlic, basil, rosemary and coconut rum
Add Cup of blue berries and continue stir frying till done
Top Seafood food with grated swiss and jack cheeses
Serve Seafood with Wild pecan rice side

Sour Cream
Shredded Lettuce
